Winter in Lexington is here to stay. The weather is cold and the snow seems to not be letting up anytime soon.

While UK keeps delivering cancellations and now a 2-hour delay, students get cooped up inside with nothing to do. Which means, it’s officially cuffing season, and what better way to keep cozy than with a piece of cake?

Cuddle up with this apple spice cake and a cup of hot cocoa. Plus it’s also the perfect quick dessert special for a party or a snack on a Sunday afternoon to share with friends. If time and money is short, use a spice cake mix instead of making it from scratch and replace the eggs with applesauce.

Ingredients

¼ tsp. ground cloves

2 apples, sliced thin

2 cups self-rising flour

3 tsp. cinnamon

¼ tsp. nutmeg

1 ½ sticks sweet butter, plus extra for greasing the plan

½ cup sugar

3 ounces honey

3 eggs

½ cup milk

Directions:

Preheat the oven to 350 degrees.

Grease pan and then sprinkle cinnamon and a generous amount of sugar on the bottom. The sugar will caramelize, so the more the better. Layer apples on top of the sugar.

In a separate bowl, mix the remaining cinnamon, cloves and flour together.

In a second bowl, cream the sugar and the butter together. After this is done, add the eggs slowly so they mix in well and don’t spoil. After all of this is mixed, add the honey and the milk. Once this is well-stirred, slowly add in the flour to make sure there are no clumps. Pour the mix in the pan and bake for 15-17 minutes.

Wait to cool, and enjoy.
