Recipe: Quick, easy Scottish shortbread

Shortbread

Shortbread

Sarah Brookbank

Try this quick and easy Scottish classic. Nothing is faster or more satisfying than a buttery and flaky bite of Shortbread. In the classic form they are rolled out on the cookie sheet and cut into squares after they are baked, but these are just rolled into balls and baked.

3 c flour

1 c powered sugar

1 1/2 c butter

Mix the butter and sugar together until they are creamed.

Slowly fold in the flour.

Roll and bake for 12 minutes at 350 degrees.

Try dipping them in chocolate, or adding a 1/4 teaspoon of vanilla extract if you want to mix up the flavors.
